Kimora Lee Simmons-Hounsou’s Mother’s Day list includes a home-cooked meal of jollof rice and chicken by her husband and kids!
“A dish that’s become significant to me is a dish from colonial French Africa—jollof rice and chicken,” the mom of three revealed to Epicurious recently. “It’s delicious and tastes even better when [my family] surprise me with it on special occasions.”
Kimora’s husband, Djimon Hounsou, was the first to introduce the Life In The Fab Lane star to the tomato-based rice dish.
* Oil — 1/4 cup
* Chicken, cut into pieces — 1 1/2 pounds
* Water or stock — 5 cups
* Onions, chopped — 2
* Red or green bell pepper, chopped — 1
* Garlic, minced — 3-4 cloves
* Long-grain rice — 3 cups
* Tomato paste — 1/4 cups
* Tomatoes, chopped — 2 cups
* Carrots, peeled and chopped — 2
* Green beans — 1 cup
* Cabbage, chopped — 1 cup
* Salt and pepper to taste
